14.5oz can Italian seasoned diced tomatoes, drained
8oz shredded mozzarella cheese
Directions:
Preheat oven to 350F.
Cut the stem off each zucchini and then slice the zucchinis in half lengthwise. Use a spoon to scrape out the seeded inside of each half, creating a hollow “boat” to hold the rest of the ingredients.
In a mixing bowl, combine the tomatoes and Hereford Chunky Corned Beef.
Evenly distribute the meat and tomato stuffing between the zucchini halves then top each with cheese.
Place on baking sheet and bake in oven for 30 minutes.
