Southwest Brisket Salad with Corn and Bean Salsa Recipe

Ingredients:

  • 1 package Hereford Smoked Brisket
  • 1 tsp sugar
  • 1 tsp salt
  • 2 TBL white vinegar
  • 2 TBL Olive oil-1 Cup corn
  • 1 Cup canned black beans, drained and rinsed
  • 1/2 Cup red onion, chopped
  • 1/2 Cup chopped cilantro
  • 2 servings prepared lettuce
  • 4oz cherry tomatoes, cut in half
  • 1 avocado, sliced

Directions:

  1. In a mixing bowl combine sugar, salt, vinegar, and oil. Stir to combine then add corn, beans, cilantro, and red onion. Stir to combine.
  2. Remove Hereford Smoked Brisket from package to a small microwavable bowl. Microwave just enough to heat through.
  3. Divide lettuce between two plates or shallow salad bowls.
  4. Top with brisket, tomato halves, and avocado. Spoon corn salsa over the top of each salad as a dressing.
