Ingredients:

12oz can Hereford Roast Beef with Gravy
1 TBL cooling oil
1 Cup diced red onion
2 TBL taco seasoning
6 Cups cooked rice
20oz can diced tomatoes with Jalapeños
2 Cups shredded cheddar cheese
2 Cups crumbled taco chips
Fresh chopped cilantro

Directions:

Preheat oven to 350F.
Heat skillet over medium high. Add oil and onions. Cook until onions are semi translucent and fragrant.
Add taco seasoning. Stir to combine.
Add Hereford Roast Beef with Gravy and stir to combine.
Place cooked rice evenly in a 9×13 baking dish.
Top with tomato then seasoned meat and gravy. Sprinkle cheese over the top evenly and then top with tortilla chips.
Bake for 20 minutes. Remove from heat and serve topped with fresh cilantro.
