Ingredients:

  • 1 12 oz can Hereford Corned Beef, chopped
  • 8 packaged frozen waffles (4 split English muffins can be substituted) toasted
  • 8 eggs, poached
  • 1 cup Swiss cheese, grated
  • Salt and pepper to taste
  • Pinch of paprika

Directions:

  1. Arrange the Hereford Corned Beef evenly over toasted waffles on baking sheet.
  2. Place a poached egg on each.
  3. Distribute about 2 TBL cheese over each waffle.
  4. Sprinkle with salt, pepper, and paprika.
  5. Broil in oven until cheese is melted.
  6. Garnish plates as desired.
