Ingredients:

  • 1 12 oz can Hereford Corned Beef, diced
  • 1 lb macaroni, cooked
  • 2 TBL butter
  • 2 TBL flour
  • 1 Cup milk
  • 4 oz cream cheese, cut into cubes
  • 1 ½ Cup shredded cheddar cheese

Directions:

  1. Heat oven to 375 degrees F.
  2. Cook noodles according to package directions.
  3. In a saucepan, add butter and cook until melted. Whisk in flour until combined.
  4. Slowly whisk in milk until well combined.
  5. Add cheese and keep whisking until sauce is smooth.
  6. In a large bowl, combine cooked macaroni and cheese sauce.
  7. Gently mix in corned beef cubes.
  8. Spoon the mix into two lightly oiled mini muffin tins.
  9. Bake for 15-25 minutes.
  10. Let cool to set up before serving. Enjoy!
