In a large mixing bowl, whisk eggs, salt, and pepper. Add flour and mix. Add in the Hereford Low Sodium Corned Beef, green onion, pimiento, parsley, and cheese. Stir to combine well.
In a deep-sided skillet, add 1” of cooking oil. Heat oil to medium high heat.
Place breadcrumbs in a shallow bowl. Form corned beef mix into 2” balls. Roll beef balls in panko.
Flatten in your palm and carefully place in hot oil. Work in small batches.
Turn fritters over as they brown on one side. Remove when brown on both sides.
Remove from heat and let cool 5 minutes before serving.
