  • 12oz can Hereford Chunky Corned Beef
  • 3 large baked potatoes
  • 1 Cup shredded cheddar cheese
  • 3 green onions, chopped
  • Ranch dressing


  1. Heat oven to 425F.
  2. Cut baked potato in half lengthwise and carefully scoop out the potato from the skin. Discard or reserve potato (we are only using the skins for this recipe).
  3. Lay skins on a baking sheet and evenly distribute the Hereford Chunky Corned Beef and shredded cheddar and green onion in each skin.
  4. Bake in the oven for 15 minutes until the cheese has melted.
  5. Remove from heat and drizzle with ranch dressing to serve.
