Ingredients:

  • 1 12 oz can Hereford Roast Beef in Gravy
  • 1 TBL cooking oil
  • 1 carrot, diced
  • 1 Cup onion, diced
  • 1 TBL garlic
  • 1 TBL chili flakes
  • ½ Cup red or green bell pepper, diced
  • 1 TBL ginger
  • 1 TBL sugar
  • 1 TBL fish sauce
  • 1 TBL soy sauce
  • 1 TBL rice wine vinegar
  • 1 TBL salt
  • 6 iceberg lettuce leaves
  • Chopped green onion to serve
  • Chopped fresh cilantro to serve

Directions:

  1. Heat skillet. Add cooking oil and sauté carrot and onion until onion is translucent.
  2. Add garlic, chili flakes, bell peppers, and ginger. Cook until bell pepper starts to soften.
  3. Add roast beef, sugar, fish sauce, soy sauce, and rice wine vinegar.
  4. Keep stirring until heated through.
  5. Add salt to taste.
  6. Spoon warm meat mix on to lettuce leaves.
  7. Garnish with cilantro and green onion.
  8. Fold lettuce sides up around mix and skewer with a pick to hold until eating.
