mini corned beef quiches

Ingredients:

  • 1 12 oz can Hereford Corned Beef
  • 4 eggs
  • ½ Cup half and half cream
  • ½ tsp nutmeg
  • ½ tsp cayenne pepper
  • ½ tsp garlic powder
  • 1 TBL salt
  • 1 Cup shredded cheddar cheese
  • 1 Cup chopped cooked spinach, drained well
  • 2 packages pre-made puff pastry dough

Directions:

  1. Heat oven to 350 degrees F.
  2. Whisk together eggs, cream, and spices.
  3. Stir in beef, cheddar, and spinach.
  4. Roll open dough and cut into 4” square sections.
  5. Line a lightly oiled muffin tin with one square of puff pastry dough.
  6. Evenly distribute egg mix between each muffin section.
  7. Bake on the middle rack for 25-30 minutes, or until egg is set in the center.
  8. Let cool slightly before serving.
