Ingredients:

  • 1 12 oz can Hereford Roast Beef in Gravy, some gravy removed
  • 1 TBL oregano
  • 1 TBL onion powder
  • 1 TBL cumin
  • 1 can tomatoes with jalapeño, drained
  • 4 large flour tortillas
  • 1 can refried black beans
  • 1 Cup shredded pepper jack or cheddar cheese
  • Fresh cilantro, chopped
  • 1 avocado, sliced
  • Fresh lime wedges
  • Salsa or hot sauce for topping

Directions:

  1. In a skillet set at medium, add roast beef, oregano, onion powder, cumin, and tomatoes.
  2. Stir to combine and cook until heated through.
  3. Prepare each tortilla by spreading 1 side with refried beans.
  4. Down the middle of the tortilla, sprinkle cheese, then warm meat, cilantro, and avocado.
  5. Fold ends up and then fold the sides over.
  6. In a clean skillet set at medium heat, toast burritos on each side, starting seam side down.
  7. Toast until cheese melts and tortilla starts to brown slightly.
  8. Cool slightly before serving with cilantro, lime, and your favorite salsa or hot sauce!
