  • 1 12 oz can Hereford Corned Beef, diced
  • 4 eggs
  • 1 ½ Cup milk
  • ½ Cup butter, melted
  • 2 11 ½ oz boxes cornbread mix
  • 1 jalapeño, seeded and minced
  • 1 Cup shredded cheddar cheese


  1. Heat oven to 375 degrees F.
  2. Mix together the eggs, milk, and butter.
  3. Stir in cornbread mix and combine well.
  4. Fold in the diced corned beef and jalapeno.
  5. Divide mixture into paper lined or lightly oiled muffin tins. Makes 24 muffins.
  6. Bake for 18 minutes or until muffins are cooked through.
