  • 1 can Hereford Low Sodium Corned Beef
  • 1lb mini sweet peppers
  • 6oz cream cheese
  • 2 tsp seasoning salt
  • 1 tsp onion powder
  • 1/4 Cup shredded cheddar cheese
  • Diced fresh parsley to garnish


  1. Heat oven to 350F. Cut stem end off peppers and slice in half down the center. Clean out the seeds.
  2. In a microwave safe bowl, soften the cream cheese. Add seasonings and stir to combine.
  3. Place peppers open side up on a baking sheet. Fill peppers with a spoonful of Hereford Low Sodium Corned Beef and a spoonful of cream cheese to fill each half pepper.Sprinkle cheddar cheese over each one.
  4. Bake in the oven for 15 minutes or until cheese has melted and started to turn golden.
  5. Remove from oven and let cool for 5 minutes. Sprinkle with fresh parsley to serve.
