Linguine with Tomato Beef and Basil Recipe

Ingredients:

  • 1 12 oz can Hereford Corned Beef, cut into small cubes
  • 1 lb linguine
  • 1 sm garlic clove, finely chopped
  • 1 med onion, chopped
  • 2 TBL sunflower oil
  • 4 tomatoes, blanched, peeled, and cut in julienne
  • 2 TBL tomato paste
  • 1 TBL fresh basil, chopped
  • 1/2 Cup parmesan cheese, grated

Directions:

  1. Cook pasta according to package directions.
  2. Drain and set aside; keep warm.
  3. In saucepan, sauté garlic and onions in oil over medium-high heat for 2 to 3 minutes.
  4. Add tomatoes and tomato paste, and season with pepper.
  5. Reduce heat to medium; cover and cook 6 minutes, stirring occasionally.
  6. Add the Hereford Corned Beef and cook for 2 more minutes.
  7. Pour over individual servings of linguine, sprinkle basil over top.
  8. Serve with Parmesan cheese.
