A family favorite throughout generations, this recipe features tender corned beef tossed in a creamy sauce. Substitute the vegetables for what's in your pantry for a delicious variation of the dish.

  • 1 12 oz can Hereford Corned Beef, cut into thin, long slices
  • 2 Cups fusilli pasta (500ml)
  • 3 oz fresh oyster mushrooms, sliced
  • 1/2 red pepper cut into julienne
  • 1 TBL green onion, finely chopped
  • 1 tsp butter
  • 1 tsp vegetable oil
  • 3/4 Cup cream (15%)
  • Salt and pepper to taste
  • 1 TBL chives finely chopped
  • 1 TBL parsley, finely chopped


  1. Cook pasta according to package directions.
  2. Drain and set aside; keep warm.
  3. In large saucepan, cook mushrooms, red pepper, and green onions in butter and oil over medium heat for 3 to 4 minutes.
  4. Add cream and season with salt and pepper.
  5. Reduce heat to low and cook for 3 to 4 more minutes.
  6. Add cooked pasta, Hereford Corned Beef, and chives; mix gently.
  7. Sprinkle parsley over each serving.
