easy beef and onion soup

Ingredients:

  • 12oz Can Hereford Roast Beef with Gravy
  • 32oz beef broth
  • 2 TBL cooking oil
  • 1 tsp dried thyme
  • 1 tsp chili flakes (optional)
  • 2 large onions, chopped
  • 1 tsp sugar
  • Salt and pepper to taste
  • Baguette sliced
  • Sliced Swiss cheese

Directions:

  1. Heat broth in a pot over medium-low heat.
  2. Add oil, thyme, chili flakes, and onions. Cover. Cook onions slowly, stirring frequently, until translucent. Do not let onions brown. Add a tablespoon or two of water, if necessary, to keep from browning.
  3. Pre-heat oven to 350F.
  4. When onions are semi-clear and fragrant, add Hereford Beef and Gravy and beef broth. Stir together and simmer to heat through.
  5. Salt and pepper to taste.
  6. Divide soup into oven safe bowls and place on baking sheet pan. Place a piece or two of baguette into each bowl and top with slice of cheese.
  7. Place sheet pan into the oven until cheese melts. Carefully remove and serve hot.

Now this is nearly the exact recipe I have always used. Hereford Canned Beef makes it take probably 3 hours less time! Since the beef is flavorful and tender straight out of the can, I don’t need to roast it for hours first!!!
