  • 1 12 oz can Hereford Corned Beef, cut into small cubes
  • 1 lb potatoes, peeled, cooked, chilled, and cubed
  • 1 granny smith apple, cored and cut into small cubes
  • 3 TBL scallions chopped
  • 2 TBL parsley chopped
  • 1 lemon, squeezed
  • Salt and pepper to taste
  • 8 oz sour cream
  • Whole leaves of green lettuce


  1. Place Hereford Corned Beef cubes, potato cubes, and small apple cubes into a mixing bowl.
  2. Add the chopped scallions, parsley, juice from the lemon, and sour cream.
  3. Mix lightly.
  4. Season with salt and pepper.
  5. Serve on a bed of green lettuce leaves or garnish as desired.
