Roll up and brown a batch of these beefy black bean burritos on meal prep day and reheat them for the family all week. These nutritious burritos are a hit with both kids and adults, too.

Ingredients:

  • 1 package Hereford Black Beans and Beef
  • 4 large/burrito tortillas
  • 2 cups rice, cooked
  • 1 cup shredded Mexican-blend cheese
  • 2 tbsp cooking oil
  • Optional filling ingredient ideas: Canned corn, diced tomatoes, diced onion

Directions:

  1. Prepare Hereford Black Beans and Beef according to package instructions.
  2. Place tortilla on work surface. Place ¼-½ cup rice in the center of the tortilla.
  3. Then, layer with Hereford Beef and Beans, cheese, and other fillings as desired.
  4. Roll burrito by folding bottom of tortilla up to cover ingredients, then folding left and right edges in toward center and rolling tightly to close. Set aside seam side down while preparing other burritos.
  5. Heat skillet over medium heat and add cooking oil. Once burrito is tightly rolled, place in warm skillet, seam side down. Fry until brown, then flip and repeat to brown other side.
  6. Once browned on both sides, remove from skillet and serve with your favorite dipping sauce.
