Ingredients:

  • 2 packages Hereford Beef Barbacoa
  • 1 can enchilada sauce
  • 2 cups shredded Mexican-blend cheese
  • 8 corn or flour tortillas

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine Hereford Beef Barbacoa, ¼ cup enchilada sauce, and 1 cup of shredded cheese.
  3. Assemble enchiladas by evenly distributing beef/cheese mixture onto tortillas, then rolling them tightly.
  4. Place rolled tortillas into a baking dish, seam side down.
  5. Pour the remaining enchilada sauce over the tortillas in the dish and cover with remaining shredded cheese.
  6. Bake in a preheated oven for 20-25 minutes, or until cheese is melted and bubbly. Serve immediately.
